Tucked into a handsome period townhouse on the quieter edge of Soho, Gauthier feels like a secret the neighbourhood has agreed to keep. Chef-owner Alexis Gauthier built the restaurant’s reputation on classical French technique, and a few years ago made the decision that defines it now: the kitchen went fully plant-based, and the Michelin star came with it.

That detail matters. Vegan fine dining is often framed as a substitution exercise, the plant version of something else. Gauthier inverts the logic. Dishes such as faux gras and carrot tartare aren’t apologies for an absent ingredient. They’re the point, constructed with the same rigour the chef once brought to a meat menu. Further down the card, autumn truffle tortellini and plum opaline make a quiet, persuasive case that the omnivore’s version was never necessary.

The setting is calibrated to match. Several intimate dining rooms spread across the townhouse’s floors, minimalist and softly lit, the kind of space where dinner unfolds over hours rather than courses. Many of the tables are here for an occasion, and the room holds that register without stiffness.

It is, by some distance, one of London’s most considered plant-forward addresses: proof that a fully vegan kitchen can carry a Michelin star without ever reaching for the word “alternative”. Come hungry, come unhurried, and let the menu do its quiet convincing.
