Australia

Australia is the third-largest country most travellers wildly underestimate. Sydney to Perth is the same flight as London to Tehran. The Tropic of Capricorn cuts the continent roughly in half, which means a single fortnight can give you bleached reef in the north and pinot noir vineyards rugged up against a Tasmanian winter — but only if the itinerary is honest about its distances.

The reef is the obvious headline and the hardest conversation. Two mass-bleaching events in the past decade have rewritten what the Great Barrier Reef looks like; the southern reaches around the Whitsundays are now reliably the most intact, while Lizard Island and the Ribbon Reefs require more careful operator selection. Lady Elliot Island Eco Resort, owner-operated since the 1980s, remains the gold standard for travellers who want their visit to fund reef science rather than tax it. The Citizens of the Great Barrier Reef programme on Hamilton Island is worth the small donation.

Away from the coast, the more interesting Australia is Indigenous-led. Longitude 131° at Uluru is the obvious entry point, but the deeper experience is a Wukalina or Maruku walk where the guides are Anangu, Palawa, or Yolŋu and the country itself is the curriculum. Bookings increasingly route a portion of the fee directly back to the traditional owners — ask for the breakdown; the better operators publish it.

Food has quietly become the main reason a particular kind of traveller comes back. Brae in regional Victoria, Quay over Sydney Harbour, Restaurant Botanic in the Adelaide Hills — the cooking has stopped imitating Europe and started arguing for native ingredients (warrigal greens, finger lime, saltbush, davidson plum) on their own terms. Pair the cellar door drives with a long lunch and the country starts to feel its actual size.
