Princi is the Milan bakery that understands carbohydrates as civic infrastructure. Rocco Princi began making bread in Italy in 1985, and official brand history traces the story from his Calabrian roots to Milan, where he opened a small bakery and added an espresso bar in 1986.
The Milanese formula is pleasingly direct: bread, cornetti, pastries, pizza and coffee, served with enough pace to suit a city that treats standing at the bar as a small social art. Princi’s own materials point to the Via Speronari bakery near the Duomo as the heart of production, while the broader brand has travelled well beyond Milan.
Still, this is best understood in its home city. Come early for a coffee and something flaky, or later for focaccia and the soft theatre of aperitivo. It is not the quietest table in Milan, nor should it be.
