BiBo is Dani García’s most relaxed idea, and arguably his most likeable. Set in La Plaza at Puente Romano (Marbella’s most exclusive cluster of restaurants), it is the chef’s Andalusian brasserie: exclusive yet easygoing, the sort of place that earns the much-used phrase ‘barefoot luxury’ honestly.

The format is a brasserie, not a temple. There is a live kitchen, where the cooking happens in full view, and the energy is sociable rather than hushed. You come to BiBo to enjoy yourself.

The menu is where García’s range shows. It reads like a culinary tour of the globe pulled through an Andalusian sensibility: oxtail brioche with thin mushroom slices and the kitchen’s signature sauce; grilled artichokes set against almond soup, smoked eel and payoyo cheese. There are raw and oyster bars for the purists, and a spectacular lobster salpicón salad for anyone in a celebratory mood.

It rewards an adventurous palate, and the long wine and cocktail list is built to keep pace. Throughout, the kitchen leans on fresh, locally sourced ingredients: the foundation beneath the playfulness.

This is not fine dining in the formal sense, and it is the better for it. BiBo is where you go in Marbella for an evening that is polished but never stiff: imaginative food, good music, easy company.
