Breathe

A sustainability-led restaurant in Marbella's Puerto Banús: three venues in one, run on its own geothermal plant and recycled rainwater.

Breathe, set in Marbella’s world-famous Puerto Banús, is less a restaurant than an experience, and one built around a genuine idea rather than a marketing line. Its concept is what it calls fresh-thinking gastronomy: fine dining that takes sustainability as seriously as flavour.

The format is unusually generous. Breathe is effectively three venues in one. On the ground floor, an artisan café and bakery turns out weekend brunches; above it sits the main dining room; higher still, a rooftop cocktail bar. A covered terrace and a garden of chill-out zones extend the options further. Each space carries its own mood, and each is marked by genuinely considered interior design.

The most compelling part, though, is the engineering you do not see. Breathe runs its own geothermal energy plant, which both heats and cools the building and supplies its hot water, all for a fraction of the energy a restaurant of this kind would usually draw. The gardens are irrigated partly with recycled rainwater, and the drinking water is purified through reverse osmosis, then remineralised.

This is the rare place where the sustainability story holds up under scrutiny: infrastructure, not gesture. The wow factor is intact; the conscience is too.

For a traveller in Marbella who wants a polished evening that genuinely aligns with their values, Breathe is a confident recommendation. Pick the venue to suit the mood, and ask about the geothermal plant: the answer is part of the pleasure.
