El Tigre Vestido sits within Finca Rosa Blanca, the eco-luxury coffee plantation resort in the mountains of Santa Bárbara de Heredia. Here, chef Kevin Charpentier makes a genuine point of pride out of provenance, gathering the freshest, highest-quality ingredients from the hotel’s own organic garden, orchards and farm, with coffee grown and roasted on site.

It is one of the most emphatically seasonal, farm-to-table experiences we’ve come across. The recipes draw on ancient Mesoamerican culinary traditions, contemporary Costa Rican flavours, and Charpentier’s own instinct for combination: a cooking style that feels rooted in the land it stands on.

The menu is not exclusively vegetarian, but the meat-free dishes are emphatically not an afterthought. Consider the pejibaye gnocchi, served with Bagaces cheese and a roasted tomato sauce, or the vegetarian burger with yucca fries. There is a chickpea salad with curried peanuts and feta, and, for dessert, a carrot and macadamia cake filled with dulce de leche and frosted with raw cane sugar.

What we admire is the integrity of it all. The garden feeds the kitchen, the plantation feeds the cup, and the cooking carries the flavour of its own hillside.
