Singapore Airlines is introducing more than 100 new or refreshed dishes across all classes of travel, in an inflight dining upgrade that reaches economy as well as Suites and First Class. The airline has named the range the SIA Chefs' Selection.

The rollout is phased, and it has already begun. Singapore Airlines says the remaining enhancements, including new beverages, serviceware and onboard service touches, will be introduced from November 2026. Passengers may therefore meet some of the new menu before the full package arrives.

The dishes come from extensive collaboration between the airline's in-house chefs, guest chefs and various catering partners. The airline says the menu brings together comforting and familiar flavours, regional favourites and reimagined classics, so the range is broader than a single cuisine.

What changes beyond the food

The upgrade covers more than the plate. Singapore Airlines lists new and refreshed menus, refined beverage offerings and custom-designed serviceware among the key features, which means the tableware and the drinks list are being reworked alongside the dishes themselves.

Premium cabins get the most elaborate treatment. The airline highlights distinctive presentation and service touches for selected dishes in Suites and First Class, though it has not said which dishes will receive them or what the touches involve.

Drinks change too. Passengers in every class can expect new spirits options, while those in Suites, First Class and Business Class will also see new wines. The airline does not mention new wines for the cabins below Business Class.

In Suites and First Class the beverage experience extends to food pairings. Singapore Airlines says cabin crew may also offer beverage recommendations to complement customers' meal selections, so the pairing advice is optional and depends on the crew rather than being a set feature.

Why the airline says it is doing it

Yeoh Phee Teik, Senior Vice President of Customer Experience at Singapore Airlines, said the review was guided by customer feedback, evolving preferences and emerging dining trends. He said the airline had examined every aspect of the experience, not only the menu.

The review, he said, took in seasonal ingredients, cooking techniques, presentation and the service given by cabin crew, as well as menu design and the choice of drinks. In his words, inflight dining is "about much more than the meal itself".

The airline has not published the full list of dishes. It also has not said how many of the more than 100 are new and how many are refreshed, or which routes will carry them first.

The November unveiling

The dining changes are one part of a wider elevation of the travel experience at Singapore Airlines. The carrier plans to unveil that broader programme in November this year, and the date matches the start of the remaining dining enhancements.

The reveal will take place in Singapore, and it is billed as an elevated end-to-end travel experience. Food and drink will form a key pillar of it, alongside other parts of the passenger experience that the airline has grouped under the same investment.

Those other parts include next-generation cabin products, the KrisWorld in-flight entertainment system, new amenities, high-speed connectivity and on-ground services. Singapore Airlines has not detailed them here, and the November presentation is where they are due to be shown in full.

Singapore Airlines is a member of the Star Alliance. The airline describes the rollout of the dishes as progressive, so what a passenger is served in the coming weeks will depend on when the new menu reaches their particular flight.
